Soba is a traditional Japanese noodle dish made with the main ingredients of wheat flour (buckwheat). These foods are shaped like Italian spaghetti noodles with a coarser texture and are usually served hangan or cold according to the buyer's request.
In Japan you will find many soba taverns on the roadside, at stations, or in famous restaurants that have stood for decades. If you find a soba shop on the side of the road or at the station, there is usually a way to eat there that is sitting or someone is standing.
